Sometimes after all the baking adventures and disasters you need to return to a fail-safe recipe to console yourself. And so after yesterday’s carrot cake cookie failure, I returned to an old favourite, a warm comforting bowl of bubbly carrot cake oatmeal. Apart from carrots, this bowl packed strawberries, cherries, diced apples, lemon zest and medjool dates, doused in the heady spices of cinnamon and almond extract and topped with my nut butter blend (chocolate macadamia & peanut butter). I used a mix of Scottish and steel cut oats, which I found out gives the best hybrid texture of creamy and chewy.
How can it be that the weekend has come and gone, and June is drawing to a close?! The fleeting nature of time eludes me. Seize the day!
