Now, I have veered very much away from the centerpiece of today’s post. Back on point, this drink is a zesty punch of dragonfruit, coconut water and a spritz of lime juice. Full of electrolytes (potassium), vitamins and anti-oxidants to recharge the brain batteries and provide you with energy for the day. I added coconut butter for a bit of creaminess but you may omit it. It was especially refreshing as it was another one of those blazing sunny days today!
- 2 cups ice cold coconut water
- Flesh of 1 dragon fruit
- Juice of 2 large limes
- 2 tablespoons coconut butter (optional)
- Place all ingredients in a blender.
- Blend on high for 30 seconds. Serve chilled and enjoy.
